Donut Shop#15: In Search Of Polk Salad AnnieRemember the Tony Joe White song about a Cajun gal that lived in Louisiana and was a razor touting woman. Her Daddy was a lazy no account, her brothers were thieves and her momma was working on a chain gang. Not far from the truth today where I live except these folks haven’t the slightest idea what Polk Salad is. If they did they would be out picking it for dinner just like Annie in the song.
I was raised up with it in Arkansas, as my mother taught me about such things. We didn’t have to eat it but it was preferred during the Springtime as sort of a wild spinach. The old recipe was simple, Polk Salad and Scrabbled Eggs adding some greens to your diet for breakfast.

On my way back from the Donut Shop I spotted several stalks of the green stuff right on the side of the road at double dead mans curve. I had to step over all the crosses on the side of the road but made it to the Polk salad and picked all I needed for breakfast. I got home boiled it twice, mixed it with Jimmy Dean Sausage, and some seasoning blend adding 4 jumbo eggs. It turned out really good. When you do you should put it on a plastic plate and eat it with a plastic fork to honor the more unfortunate that use to have to eat it or nothing. Frankly it is so good it wouldn’t bother me…Pass it on.
